This Gajar Ka Halwa is a lovely sweet dessert pudding and is loved by many Indians. Gajar Ka Halwa is a dessert you can eat all year round; you eat the Gajar Ka Halwa cold in the summer and warm in the winter.
Ingredients
- 4 to 5 carrot (peeled)
- 2 tablespoons butter
- 1 teaspoon cardamom powder
- ¼ cup cashews
- ¼ cup pistachios
- 4 cups of full cream milk
- ½ cup cream
- ¼ cup sugar (or to taste)
- ¼ teaspoon saffron

Instructions
- Rinse the carrots then peel and shred.
- Now take a pan and heat butter in it, add the cardamom powder and cook for few seconds until it leaves the aroma.
- Add the shredded carrots and sauté for 2 minutes.
- Now add full cream milk and cook for about 15 minutes with constant stirring. The milk will reduce with time and wait till the milk is in level with the shredded carrots.
- When the milk is reduced, add sugar and mix well.
- When the milk is reduced to the level below the carrots, add cream, cashews and saffron. Mix well and again cook at low heat for 5 to 10 minutes but don’t forget to stir otherwise the carrots will stick to the base and that will ruin the taste of halwa.
- When the halwa is ready, take out in a serving dish and garnish with chopped pistachios.
